GREEN GREEN GREEN!!

I love pretty much any and all holidays. Spencer just laughs because he thinks I just go overboard. The 1st year we were married I colored the milk green on St. Patrick's Day. I used to go to work before Spencer and he was a little freaked out to wake up and find green milk. Since St. Patty's is coming up I thought I would share my Irish spirit with you. I found a yummy green soup recipe and I thought I would try it on St. Patrick's Day. So, if you have a a fun green recipe or tradition share it.

Salsa Verde Soup

  • 2 cans (7 oz. each) salsa verde
  • 3 cups cooked chicken
  • 1 can canelli or great white northern beans
  • 4 cups chicken broth
  • 1-2 tsp cumin
  • 1 can cream of chicken soup (also delicious with sour cream instead)
  • 1/4 cup uncooked rice

Place salsa and broth in pot to boil. Add Cream chicken soup and cumin. Return to boil. Add rice and let simmer until rice is cooked. Add chicken and beans. Simmer for 10 mintutes.

* Serve it with shredded PepperJack cheese, avocado slices and tortilla chips.

Sounds Yummy!! I love holidays too. I remember as a child my mom use to buy green bread for St. Patricks Day,,, we thought that was so neat!

Glad to know you just weren't avoiding me haha jk. So how is it being mommy of two? It was so fun to have you and Gavin at the wedding! I still have your thank-you card that I have yet to send (yea I pretty much suck). So I am trying to convince Jenny to get a blog. I think she might. But yes, I am done with school in six weeks...YIPPIE!!! Who knows what then! Anyway, hope all is well!!!

Yum, that sounds really tasty- maybe I'll try it out, too! Love the new look on your blog! Hopefully we'll make it to the park tomorrow- somedays are good and some aren't so good- so we'll see in the morning. Have fun though!
