Whenever I try a new recipe I ask if its work keeping the recipe. And this one is a keeper! I thought I would share since its such a yummy summer recipe. ans easy too. Just had some focaccia bread and dinner is done! I believe I got this from picky palate.
STUFFED SALAD SHELLS
1 (16 ounce) package jumbo pasta shells
4 cups romaine lettuce (chopped)
½ cup fresh basil (chopped)
1 cup tomatoes (chopped)
¾ cup cucumber (peeled and chopped)
1 cup cooked chicken (chopped)- I just used a rotisserie chicken
3 ounces hard salami (chopped)
1/3 cup roasted garlic vinaigrette dressing- I just used our favorite dressing.
Step 1: Cook pasta shells according to package directions. Drain and allow to cool.
Step 2: Place lettuce, basil, tomatoes, cucumber, chicken and salami in a large bowl. Pour vinaigrette dressing over the salad mixture and toss to coat.
Step 3: Stuff each shell with the salad mixture. Cover and refrigerate for 2 hours before serving.
(Makes about 20-25 shells)

Yo-so obviously I haven't been on in awhile...you have 3 new posts - to me atleast. I've been kind of in a non-blogging funk. But I should...ugh! See what you've done to me? The recipe looks delish, I'll have to give it a go...

So I finally tried this recipe tonight. We loved it, except of course Aubrey (what does she love these days??) I think it would also be good with some purple onion;)
